A 3000 lbs wood fired clay oven from Italy riding on a bright yellow 1946 Chevy Truck is bound to get some attention. Designed by Ted and Christine Lafleur, this truck has all the bells and whistles, including an espresso machine. Everything is home-made; the sauce, the dough, the truck, “even the staff”, a favourite joke that makes their son’s eyes roll.
Ted wanted a chicken truck, but Ted’s chef uncle told him he looked like a pizza guy, and helped him rig up his sweet ride. Investing as they go, they would eventually like to get a sheeter, which flattens the dough and will speed up time between orders. For now, good things come to those who wait. The meat-za loaded with long strips of bacon, ham, pepperoni on that perfect bubbly, charred-from-the-fire pizza dough and that sweet, tangy home-made sauce, is pure pizza perfection.
