Blueberry Lane

After taking up baking to use up leftover blueberries from her namesake property, Blueberry Lane, Sandie Bingley has found her calling; satisfying the South Coast crowd with a collection of pies,tarts and cinnamon buns, dripping with buttery, brown sugary goodness.  A tiny, homey display in her front foyer features stacks of sweets, all served up with a slice of nostalgia.

When pressed for an account of her baking inspiration, Sandie admits that her first butter tart recipe came from the back of a box of raisins.  She now bakes a veritable collection of tarts; plain butter, walnut, pecan and raisin, a tart for any taste, if you will.  When asked what her favourite thing to bake was, she smartly replied, “I bake a lot of butter tarts — because that’s what the people like”.
