Big thinking and big names in the business go hand in hand here. This avant-garde winery features wines that are wild fermented, in the yeast that the skins of their own grapes produce; as in no yeast is brought in from other sources whatsoever. It yields a longer inoculation time, as long as 16 months for a batch, compared to one month with traditional yeast.
It’s a big risk, but winemaker, Andrzej Lipinski, (former Assistant winemaker to VEW, winemaker for Megalomaniac, Legends Estates, Burning Kiln, Fielding Estate, Organized Crime, Foreign Affair, and current winemaker to Colanari), and his whole family stand behind the idea, (wife Janina, son Jakub, and daughter Kaja, all hold major roles within the winery). And so do their fans, once they come in to try the wine, which is made appassimento style, where the grapes are dried in tobacco kilns. The rich, complexity of the not-too-familiar Chenin Blanc, their first vintage, will impress.
Housed within Hunter Farms, the red Cellar door beckons you to the tasting area and production facility, although you may wonder if you’re in the right place, you’ll feel right at home once you get inside.
