Last of the snow days

Cold winter mornings call for the occasional personal snow day.  How could I resist when the outside looked like…

and the inside looked like this…

I thought it would be the perfect opportunity to make some home-made caramels for Christmas since I saw a recipe in Food & Wine, and then again in House & Home, and then again when I saw that Provisions (a Niagara-based food company) was selling caramels at the HandMade Market at Fielding Winery.

Ingredient assembly: Vanilla, Butter, Lavender, Cream, Salt, Corn Syrup

Boiling didn’t quite work out. I couldn’t get it to reach a high enough temperature.  Too hot to hold the thermometer up.

Plan B. I realize that caramel sauce will work just as well.

The final product: Vanilla Ice-Cream with Lavender Caramel Sauce. Super sweet and sticky. Going to try again to make as Christmas presents – set in little mason jars with labels and twine. Thanks to Provisions for the inspiration.
